Why?  Two reasons:1.  It was 99 degrees when I left work at 4:30, there is no way I am even thinking about turning on the microwave2.  I'm cooking for just me, not my husband, so I don't go all out.So, what did I have?  I opened a bag of pre-cut and mixed salad (lettuce, carrots, red cabbage). Most of the time, I am actually just trying to put a healthy meal on the table at the end of the night.  As the weather is getting hotter I am on a mission:Cooking without heating the house!!! I live in a small one bedroom apartment that is a hot box when I open it up at the end of the day.  The last thing I want to do is add more heat to it.
