Pausing period

I know I haven't posted in a while. I'm trying to find a better format for me to make this a successful site as well as something that works for me and you (the reader) both. Please be patient with me. Go ahead, just put this in your RSS reader and it will update when I am back up and running!

His favorite again!

Weather: 82 degrees with a slight cooling breeze
Preparation time: 30 minutes

Tonight was a hamburger helper night. I was actually going to make it last night, but we went out instead. So, since the meat was already out and thawed, I figured we needed to have it tonight.

Score:
Appropriate for weather: 4. With the breeze, it wasn't too hot in the apartment with the door open and some fans going; however, the kitchen got pretty warm.
Filling: 5
Ease: 4. If you can follow box directions, you won't have too hard of a time; but I do know some people who could even mess this up!

Reteraunt Review-Costco

Weather: 80 degrees, cooler in the shade, actually kind of nice
Preparation time: depends on the line

Today, my husband decided we would stop by Costco for dinner on the way home. After all, you can get a hot dog and a coke for $1.50! Between the two of us, we could get our fill for less than $5!!!

I have had their salads in the past ($3.99 plus you have to add a drink), but I prefer the hot dogs. I hot dogs have always been a favorite of mine...yes, even when I learned what's in them! When I have had their salad, it was more than I could eat by myself! So, I am always willing to "dine" at Costco in their covered patio area.

If you haven't tried it, I highly suggest it. No matter how long the line is, it seems you get through within 5 minutes. They are very fast and productive! You can also take home a fully cooked pizza as well, or buy it by the slice. They have a really neat set up!

Score:
Appropriate for weather: 5! It wasn't too hot to be eating outside and the covered patio made for nice shade.
Filling: 4.5
Ease: 5...you don't even have to have much patience as the line moves so fast. You walk up thinking this is going to take forever and, pretty much, you blink and you're at the front!

I did it again...

Weather: 85 degrees and HOT
Preparations: 45 minutes

So, I did it again...with almost the same thing! Driving home I asked my husband what he wanted (I think that's where I started to go wrong) and told him what we had (I know this is where I continued to go wrong) and he said "You should make anything that would go well with the potatoes that you made the other night; those were really good"...and I listened (and that is the point where things got out of control!).

So, we got home and I sliced up the potatoes and began the journey. I decided to make some carne asada fries type of thing. I did get a little smarter. On the last 10 minutes of the fries, I just stuck the steak on a tray (lined with foil) right alongside the potatoes and cooked it all together. When they were done I put fries on the plate, cut up chunks of meat and sprinkled that over the fries, and then sprinkled cheese over it all.

While I was cleaning up the last of things, I stuck the plates in the oven (probably not the best idea, but I wanted the cheese to melt real good). When everything was clean I took the plates out of the oven and topped it off with sour cream. Oh yeah, the oven was off. I was just using the residual heat from the oven to melt the cheese and keep things warm. Plus, we use sturdy paper plates to eat off of since we don't have a dishwasher and it's just a pain to wash dishes so we try to do as little as possible. The plates were hot when I took them out, but they were fine for those three minutes they were in there; and the cheese melted!

So, how does it score:
Appropriate for weather: 1, I don't know why I do this to myself. I get so hot in the kitchen like this that I actually get nauseous and then I can't eat; but I did eat some and it was good
Filling: 5..if you eat it, it's very filling
Healthy: 3.5 I'm sure it's healthier than that, but come on, they are fries! Topped with CHEESE and MEAT and SOUR CREAM...that can't be very healthy
Ease: 4 Making these potatoes is really very easy, but I can see someone messing it up. Plus timing everything right is key as well, but it's not too difficult

Late night dinners

Weather: 80 degrees, but quickly cooling off
Preparation: 15 minutes, max

We did another night of one for me and one for him. We stopped at the store on the way home (I'll blog about a typical shopping trip later) and so by the time we got home, we didn't want much. He wanted a bean and cheese burrito; I wanted a salad.

First, I opened a can of beans and put it in the microwave. While that was heating up, I set the table and put out the ketchup (remember his weirdness for ketchup?), cheese, sour cream, and of course the utensils. Then I cut the remaining of the head of lettuce into a quarter wedge and covered it with dressing and cheese. By the time this was all done, so were the beans.

Take the beans out and put the tortillas in for 20 seconds. Meanwhile, I am giving the beans a quick stir. By the time the tortillas are done everything is on the table and we are ready to eat.

Score:
Appropriate for weather: 4. Mine was perfect for a warm night, his wasn't perfect.

Why you never see me cook with tomatoes

Okay, I'm Italian and I don't have very many tomato products here...what's the deal? Well, I don't like tomatoes. I can put up with them in a good marinara sauce and possibly some other things, but I really don't like them. Apparently that's a good thing! So, you won't be seeing tomatoes any time soon on this blog!

Resteraunt review-Hamburger Factory

Weather: 79 degrees, a bit hot but the slight breeze helped cool it down
Preparation: none obviously, just the drive!

On the way home from our trainings today, my husband and I stopped here for dinner. The Hamburger Factory in Poway has always been a favorite place of mine; so when he suggested going there I jumped at the chance. Not have to cook on a hot day and enjoy a great meal? Count me in!

Of course, when you go to the Hamburger Factory you should eat, what else, but Hamburger! I ordered the Ortega and ended up taking half of it home. What can I say, I couldn't eat a burger that size in one sitting to save my life! I had looked at the Bleuburger, but seeing those chilis was too much temptation for me. Plus I had blue cheese on my salad.

My husband had the Gringo. It looked really good and he enjoyed it. Mine was delicious as well and I am so glad I made that choice. We also ordered frings (that's a basket with a mix of fries and onion rings for those of you who don't know). Their fries were pretty standard; but the onion rings were great! I have to say, they are probably one of my favorite onion rings around.

The environment of the restaurant is nice. It's got a great "old farm life" feel to it. It's a bit noisy inside, but that's how it's supposed to be in this type of restaurant. The only reason it affects me is that I can't hear a thing in places with lots of background noise and end up saying "WHAT?" more than I'd like to.

So, how does this score?
Appropriate for the weather: 5! Anytime I don't have to cook on a hot day gets a 5
Filling: 5! I brought home lunch for tomorrow...what else can I say
Healthy: 4. The fried food brings it down, but I did have a salad!
Ease: 5...what's easier than parking your car and sitting down; unless you have a hard time deciding what you want...then you might need to knock the score down a bit.

Why do I do this to myself?

Weather: 80 degrees outside, 85 inside...and HOT HOT HOT!!!
Preparation: 40 minutes

As we're driving home together (remember we are carpooling today) I tell my husband: I can make those meatloaf muffins or I can make hamburger. If I make meatloaf, we'll have mashed potatoes, if hamburger it will be fresh baked fries. He chose the burgers.

I had taken out ground PORK to make this meal, so they were really porkburgers. Anyway, not like hamburgers are made from ham...

Okay, back to it. Remember, I am cooking for 2, so you may need to make more for your brood. Turn the oven on to 475. I took 3 average sized russet potatoes and cut them into strips of about 10-13 strips. Then, soak them in HOT tap water. Just fill a bowl and put them in as you cut. They have to soak for about 10 minutes. While they are soaking, line a baking pan with foil (I do this to make clean up easier. If you don't want to do this, you don't have to. Next, put 3 Tablespoons of vegetable oil (not olive for this, it ruins the taste...well overpowers the potato) onto the foil in the baking sheet. Spread it all over. Then sprinkle some salt and pepper liberally over the oil.

At this point, I move to the pork (1 pound) and slide it into a bowl and pour some bread crumbs, italian seasoning, worceshire sauce, into it. You can add whatever flavors you like, but that's what I use. Squish it together (the same as the meatloaf muffins). Your 10 minutes should be about up for the potatoes at this time; wash your hands and set the meat aside (in reverse order).

Drain the potatoes. I just put my hand over the bowl and dump the water out and shake a bit. Now add 1 Tablespoon oil to the potatoes in the bowl and shake to coat the oil evenly. Lay the potatoes in a single layer on the baking pan. Then put foil over this and put it into the oven for 5 minutes.

Start cleaning up the potato mess: bowl, oil, cutting board, knife, etc... When the 5 minutes it up, take the foil off the top and keep the pan in the oven. Continue cooking for 10 more minutes. During this 10 minutes, I took out my George Foreman. If you don't have one of those, get your frying pan ready on the stove. I used the foil that just came out of the oven to hold my burger patties. Split the meat concoction into 4 sections. Take each section and form it into a burger shape with your hands. Patting it until it is the thickness and roundness you like. Do this four times and put it aside.

Take a break from the WAY TOO HOT KITCHEN THAT YOU ARE MELTING IN!!! When the 10 minute timer goes off get the potatoes out of the oven and flip all the pieces over. They should be a nice golden brown on the side that was down. Put them back in for another 10 minutes. During this 10 minutes, put the hamburger patties into the George Foreman that is warmed up now for 5 minutes; if you are using a frying pan, put them in the pan and cook and flip halfway through.

While the burgers are on the grill, get the bread ready. What do you put on yours? Ketchup? Mustard? Mayo? Whatever you like! Once the burgers are done, take them out and slide them onto the prepared bread. Take out the potatoes and serve them up on the plate as well. Sit down and enjoy!

How does this score:
Appropriate for the weather: 1! I should never have ventured this meal in today's heat. Nope! It was WAY too hot. I was literally melting and ended up not eating much because I was too hot to eat.
Filling: 5. Not for me, I didn't eat. But my husband was definitely filled. And we had 2 burgers leftover and a serving of fries.
Healthy: 4. Using the George Foreman is a plus. Okay, I don't actually believe that it is healthier, but they say it is. I find that it's more water that is dripping out rather than fat, but I still love cooking with it. The fresh fries is what does it for me really. They have a much healthier taste!
Ease: 2. There is a lot going on all at once and you have to stay on top of it. If you can't handle multitasking, this is not a meal for you. You could do one thing at a time; but I'm like Chef Ramsey in Hell's Kitchen this way: everything should come together at the same time.
Weather: I honestly don't know...sorry guys! When I initially planned on preparing this meal at 5:30, it was 68 degrees; but then this happened. All I do know was that it was 8:55 when I began cooking and it was dark and comfortable.
Preparation time: 15 minutes

After our little adventures and we got home, I began preparing dinner. Earlier he had requested Grilled ham and swiss cheese sandwiches. For the past 2 days I have been craving wedged lettuce salad. So, we both enjoyed a great meal together!

Here's how it goes in these 15 minutes:
Butter one side of two slices of bread for each sandwich. I place on slice of bread in the pan butter side down; but one slice of cheese down, one slice of ham, and another slice of cheese, and the other slice of bread butter side up. I do the two slices of cheese because I have found this keeps the sandwich melted together very well. After all the sandwiches are in the pan, turn on the heat to medium.

Now, I move to the lettuce. Take a full head of lettuce and cut it in half from the core to the top. Take this half and lay it down (flat cut side down). Cut this in half as well. You know have two wedges of a head of lettuce. For me, I use one wedge per person. Take a wedge and place it on a plate (the uncut portion touching the plate). You should have the point from the two cuts sticking up with both cut edges exposed. I like to sprinkle a little bit of cheese over this then drizzle dressing over the entire wedge. I use a zigzag pattern across it. Then I sprinkle a little more cheese over that and, if I have it, I will also sprinkle some crushed bacon or sunflower seeds or other topping to give it some texture.

Now, go back to the pan and flip those sandwiches over. They should be nice and golden brown on the cooked side. This is where I clean up the remaining mess: put away the rest of the head of lettuce, dressing, cheese, and everything else I used.

By this time, the other side of the sandwiches should be golden brown and ready to go on the plate and sliced in half (I prefer the triangle slice, but whichever one you like is fine by me).

So, a quick simple meal, how does it score:
Appropriate for the temperature: 5. Considering it had significantly cooled down...
Filling: 4, it's amazing how much that wedge of lettuce fills you!
Healthy: 4.5...something about the fried butter sandwich makes me think it's not the healthiest
Ease: 3.5; you do need to be able to multitask if you do it my way; however you could do one thing at a time and it wouldn't be a problem; but add on top of that the perfect flipping time.

Was it worth it?

Weather: 64 degrees way overcast, with slight drizzle in some areas.
Preparation time: 30 minutes total

Well, it was a different hamburger helper tonight. To me, they all taste the same; my husband, on the other hand, was really looking forward to this particular one for the past 3 days. I'm not sure why. But he seems to think they all taste different and apparently this is one of his favorites.

I had a very long drive today and really wasn't in the mood to cook. I was going to be happy to cut a head of lettuce in half, sprinkle some dressing and cheese over it, and call it a meal...I should have gone with my choice.

Why? Because it would have tasted better? Because it would have been healthier? No, because my husband, who just HAD to have hamburger helper, went to bed halfway through the cooking time and no amount of yelling, hugging, jumping on the bed, or anything else was waking him up. So, here I was stuck with a meal I didn't really want. But, since it was there...

here's the score
Appropriate for weather: 5. Being cold and overcast, it was definitely very nice to have a warm meal; this scored better than my lettuce meal would have done.
Filling: 5
Healthy: 3, I just can't score a boxed meal any higher than that
Ease: 3.5

Weather: 65 degrees with a slight breeze, so pretty nice
Preparation time: 30 minutes

Tonight I made Hamburger Helper; it's my husbands favorite. I had never made this before I was married. I thought is was supposed to be gross and nasty...turns out it's not so bad. Just follow the directions on the back of the box and enjoy!

Now, maybe because I never got accustomed to making it; but every time I make any of these dishes (and there are a whole bunch to choose from) it always comes out soupy. So, I have been experimenting with timing and measurements. Tonight it was fairly decent. I added an additional 10 minutes uncovered simmer time and probably 1/4 cup less water.

So, here's the score:
Appropriate for the weather: 4. It was okay, but the kitchen warmed up a little uncomfortably
Filling: 5.
Healthy 3. I am sure this is not the healthiest meal ever; after all, it comes in a box!
Ease: 3.5. You do have to be able to brown beef and follow directions
